We had our annual neighborhood cookout today and I brought the fruit salad. I actually won the award for the best side dish and was given a gift card and a warm applause from my fellow neighbors (just thought I’d share that). Anyway, I found out the key, and this is a great tip to use, when you make a fruit salad, don’t use fruits such as watermelon or pineapple who’s juice is going to run and disrupt the flavors of the other fruits. Instead, I would suggest using dryer fruits such as cantaloupe, honeydew (if it’s ripe), grapes, strawberries, blueberries, and mangoes so that the flavors blend well but are not overly saturated from the other components of the dish.

Great advice. This is a great salad during the summer,

2 lbs roasted beets, skins removed - ((about 6 medium))
3 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp sugar
1/4 tsp cumin
