I'm not that much of a Coffee Nerd, 8 O'Clock is fine for me, though I will buy Sumatra and other preferably dark roast beans at places like Fresh Market. Used to switch up with Community Dark but I can't get the beans here anymore, just ground. There is actually a Coffee Store in my neighborhood that recently opened that I haven't tried yet. I use a coarser grind, but not the coarsest, for the percolator.
I may one day step into the world of roasting my own beans but haven't done it yet.

Sounds like they had no idea what they were doing and used cool water combined with a "normal" extraction time. A full extraction using hot water (195-205f) should take 4-6 minutes, depending on preference and length of bloom. When I make french press coffee, I can immediately drink after pouring if I were extremely careful, but I generally let it sit a minute or so to make sure I don't burn my tongue.
To give you an idea of just how badly they fricked it up, french press coffee should be among the most full bodied coffees you will ever have, simply due to the nature of the ground size and course filter. In fact, people who don't like french press coffee generally don't like it for exactly that reason. You'll hear them complain about the "sludge" at the bottom of the cup if you let it sit so long that the solids all filter down. That it doesn't have a "clean" mouthfeel.
