Most butts that have cooked have look more like a roast. The shoulder that I did was much flatter. The fat content seemed a bit higher. The texture of the meat seemed different as well. The shoulder meat seemed a bit softer if that makes sense

Maybe he is calling the butt a shoulder and not differentiating it from the picnic cut. IDK. They are slightly different. Cook the two at the same time and it easier to tell.

Yes. I get you. I'm not saying the picnic cut though.

Ok I think we ARE on the same page now. It was defintely the shoulder. No bone. It was smoked for about 6 1/2 hours and was outstanding. The store that it was purchased from definitley made a distiction b/w butt and shoulder, hence the question.

We may be all on the same page, but I still don't know what you cooked.
I'm thinking it may have been cut between the picnic shoulder and the boston butt shoulder to produce a smaller piece of meat. or
A deboned Boston butt or picnic which makes it flatter.
BUT....you did say that you have cooked Boston butts before and this is different. So...maybe it is a picnic. The mystery continues.

Just remember what and where you got it from and keep cooking it the same way. And take a picture next time!
I love to BBQ for people and find it nice to get others opinions on methods, especially Louisianians.


Oh. I prefer the picnic shoulder. My father likes to slow roast butts and when I BBQ butts it reminds me of a that. Probably completely in my head.

Yes this was definitely not a butt. I will get another, it was that good, And post pics. First LSU game seems like a good excuse for another one on the smoker.
