Pork on the smoker

Carnitas in instant pot then finished on smoker with ribs using apple wood.

Pro tip: smoke it first and finish it in the instant pot. Once it’s cooked, it doesn’t soak up much smoke flavor. Looks good and I’d eat it.

He's right. Once the outside of the meat hits 140 degrees it doesn't soak up smoke flavor any more. This is why you don't need smoke going for the entire cook. At some point it's just smoke and doesn't enhance the meat further.

For me the Instant Pot is pulled at about 90% done and the last 10% is for crust is my Wat. Was not sure how much smoke can penetrate pork in about 10-15 minutes on a grill.
