Nobody wants ribs with meat that falls apart. You'll have juicy ribs with a good smoke flavor. You'll also have to eat em like a rib.

Poor choice of description on my part. I just meant ribs that pull off the bone rather easily and are moist, rather than being tough from being under- or over-cooked.

Thanks for everyone's ideas and tips. I'm going to marinate them tonight and cook them tomorrow. Will post an update when finished.

I know this sounds awful. I was over in Tejas for Easter and my cousin took two slabs of baby backs. Poured 3 Shiner Bock beers over them and cooked covered in oven for about 2 and half hours, covered. Then removed and sauced and put on gas grill to finish and they were pretty damn good. BOILED RIBS IN BEER
