Thanks for all the suggestions. I smoked a 10lb yesterday and did an injection of apple juice and i followed the pork butt recipe on Meatchurch.com.
I did a blend of Honey Bacon BBQ rub and Voodoo rubs. It smoked for about 6hrs to 155 degrees and then wrapped it per the recipe. I also added some extra rub with the brown sugar. The only other deviation was I cooked it fat side up.
Before the wrap.
After the wrap and rest (about 1hr or so).
I would have to say it was amazing! We had a good bit of leftovers and put it in an omelet with some candied jalapenos.
