Pineapple smoked sausage

Wanting to give it a try but not sure how much pineapple to use. Anyone got any pointers?

I'm pretty sure you have to use dehydrated pineapple because fresh pineapple breaks down the proteins in the meat and turns the sausage to mush. Never made it though but I do get some made with every deer we kill. Family loves it.

Hoping someone on here has some good advice for you, I haven't found much good info, but its my favorite tasting sausage.

I have never tried to make any as my wife, no pics, and I have always enjoyed the pineapple sausages from "Lil Butcher Shop" out of Hattiesburg. You can find their sausage in any grocery store on the Northshore including Walmarks. However, if I wanted to make it myself I'd probably start here Making Pineapple Sausage . It's a YouTube link. Then I would head over to Smoking Meats forum and start a thread asking for advice.
