I don't know the names of the dishes because they are completely off menu. In fact, there isnt' even a menu with the names of the dishes. The people that orders them usually talks to the chef and know what they want, which is why I never caught any of the names.

As for a place that does have an actual Chinese Menu. Try the Chinese Inn on airline. There's a chinese menu but it's all written in chinese and like i said, my chinese is horrible so usually the waitress helps me out. But I do have a menu at home some where with all the items circled so that we would know what to get next time, and I will try to find it and scan it for you. And no, it isn't something crazy like cow tongue or chicken feet.
