I've done red beans twice and white beans twice.
All times I have cooked the beans in the pressure cooker (without soaking) for 40 min with only water, using the manual setting. I saute the trinity and meat in ceramic cast iron separately. Once the beans are cooked, I combine with the trinity and meat in the ceramic coated pot and cook on medium heat for 20-30 min. I mash the beans to get them creamy because the pressure cooker keeps them whole. Although they are whole, they are generally cooked perfectly. The flavors come together pretty quickly and I season to taste.
It's not quite as good as just doing them on the stove, but it's pretty damn close considering you can have cooked, tasty beans in about 1 hour and 15 minutes.
I am still learning my instant pot as well, but everything I have done in it so far has been quite tasty.
