Drain cheese?
Help me out?

Freshwater Mozzarella? The balls you have to slice? Like the ones on tomato and cheese salad?
Yup...this stuff:
It's usually sold packed in water..."drain cheese" was a poor choice of words. You need to remove the cheese from the container and dry it off.
Again, slice it up and scatter over the sauce. Fresh mozzarella is absolutely essential for pizza margherita, which rocks.
Once you start using this stuff, you won't want to use anything else...

Freshwater Mozzarella
OK where can I get it ?
I make pizza from scatch often and the biggest problem I have is finding good cheese.
Some great tips here that I agree with
bread flour - check
baking dough first - check
cooling on a rack - check
a few others
Instead of a sauce try using a layer of paper thin slices of fresh tomatos.
Put your pizza stone on a charcoal BBQ pit. great wood fired taste.

If you go to a reasonably big grocery store you should be able to find fresh mozzarella where they have the "fancy" cheeses. It'll either be in a hard plastic container (like this):
or wrapped in plastic (like this):
Again...slice it (it doesn't shred well) and go to town.
