Need some history of cajun food

I am doing a report over cajun food for foods class. I have a 4 min speech and need it to be 6 min. I have looked up lots of info from the internet but would like to get some history from the locals. Thanks guys.

Go read the John Folse encyclopedia. Create a few sentences on German vs French influence, the Ursuline nuns, etc.

I'm not sure what else you're looking for. I'd imagine most of what people would tell you here they would get from the internet too. Just add a little more BS to you speech and talk slow. Here's a few websites if you haven't already seen them.

There is a lot of great information there.

It would have been a lot cooler if he would have given the people who actually wrote all of that stuff credit!
