Need some feedback on Elk Tri-tip

I work a Veterans benefit wild game/ fish dinner every year. Normally I get panfish duty - simple and easy. Somehow I drew elk tri-tips this year. I have ideas and I know how I would cook a normal dinner. Thing is it’s 12 tri-tips for a food service starting at noon on a Saturday. I have a few ideas but would appreciate any insight. TIA

Sous vide is actually really good for this because you can hold them at temp (I like 130), pull them out, and sear them as needed. Good luck. Post pics.

Yeah I would do this. It makes cooking a large quantity super easy and you can adjust internal temp with your sear time.
