Need som help on pork sausage recipe?!

Been trying different seasoning but can’t get what I’m looking for. I’ve made 3 batches 10 pounds a batch and none are what I’m looking for. Does anyone mix there own seasoning and if so would you mind Sharing?

This is mine.Very similar to Poches.
For 10 pounds
10 pounds pork
5 tablespoons salt
3.5 tablespoons cayenne pepper
2.5 teaspoons Accent
1.5 teaspoons brown sugar
2 cups water
