Roast in the crock pot. Put it in when you head down to the beach and its ready when you come up in the afternoon.
Also, my sister-in-law makes crawfish enchiladas every year way in advance and freezes them. She takes them out the freezer and into the oven. It is easy and can be pre-made.

Make a big batch of jambalaya ahead of time...freeze it and bring it with you.

Chicken salad is a great option, and leftovers easily become snacks or another day's lunch. If you want to "fancy" it up, make a couple different variations: one w/grapes & walnuts, another w/dijon mustard & chopped cornichons, etc. Get a sheet of focaccia & split/toast to make sandwiches.

Fish tacos are light & beachy: you can either fry the fish for a traditional FT, or use a stovetop grill pan for a lighter option. Slaw, avocado, crema, a stack of good tortillas...all you need is a pitcher of margaritas to complete the picture.
