Need help from fellow Food Network watchers

Channel pretty much stays on in our house. Saw an episode a while back, I think “best thing I ever ate”, but not positive. Was a restaurant in Chicago (again, I think) and it was a steakhouse with their specialty dish being lots of different cuts of meat topped with a large marrow stuffed bone cut lengthwise. Planning a trip to Chicago next month and would love to go check it out. I’ve been searching online for hours now and I’m starting to think I might have the show and the City wrong. Any chance anyone knows what I’m talking about?

That was Aaron Sanchez and a restaurant called Centrico in New York. Looks like Centrico is no longer - we will have to twist Aaron Sanchez's arm to make this dish here at Jonny Sanchez

Although that dish looks awesome, that’s not it. That’s in San Francisco too (not NY) and this definitely wasn’t in California. The thing I remember about the video the most was the large split bone they placed (marrow side up) over the top of the other meat.
I’m thinking it might be RPM in Chicago, but not the dish in the pic above. Might even be MJ’s restaurant. I just can’t find the video and not seeing it on their menus.
