Will the casings still be usable if they are frozen? I bought a hank that was labeled for 25# of sausage. Think it was 25 or 30 mm size. My batch of sausage pre-stuffed was 27#. I rinsed and soaked the whole hank and ended up with about a 1/3 of the casing left over. Will the casings still be usable if they are frozen or should I just re-salt or throw away?

The place I get mine from told me to salt the water they are in and freeze them, if I wasn’t going to use them all. So I’m assuming they will be fine, however I have yet to need to freeze any. So I can't speak from experience.

Rinse and drain casing. Then put in sealable container (Tupperware) had 3/4 cup non iodized salt (no need to add water) stir and refrigerate... no need to freeze... they will keep for a long time. I have some 2 years old.
SMOKINGMEATFORUM has a sticky on how to care for casings. Well worth the read.
