Meridian is not well known for dining. There is lots of traffic on I-20 and the chains could care less about quality and service. They will get their business regardless.
There are a few local restaurants that we frequent because they serve food we like. We go to Jackson to dine and Tuscaloosa and Birmingham and the coast. We make it to NOLA several times a year, usually just for dining out and gallery crawling.
There are foods I like and we try to eat at those places. Unfortunately, I have been blessed to eat good food all over the world. In that way I am hard to please.
Yes, we do eat a lot at home. My stove has the ability to stand toe to toe with any local restaurant and it seems foolish to eat out locally when I can do better at home.

Best truck stop food ever-
BP truck stop in Villa Rica GA on I 20 midway between Atlanta and the AL/GA line. Used to stop there all the time.
