My mom did the same thing. I have that grinder, and have her recipe books, was a great cook along with my dad

I use Italian sausage instead of breakfast but otherwise that is the way I do it. Learned from my mom, who was Sicilian.

Looks good, but imo without liver, it’s not dirty rice.

Remember my grandmother grinding livers and gizzards for the dressing. To me, it just doesn’t taste the same without.

Appreciate the tip about cooking the rice the night before and refridgerating. One tip I can give to you is to brown your meat in smaller batches. When you add it all in at once like that you end up steaming it instead of browning it. You want brown bits to form in the pan - dats the fond- where the flavor at

The reason I have never made my grandmothers famous dirty rice is because she uses gizzards and liver and while I know it is in there, I can eat it. However, I think if I made and had to cook that stuff, I wouldn't be able to eat it and appreciate it the same way. One day she will be gone and I will have to make it but until then I just enjoy hers.

We call that Eggplant Dressing and make it a few times a year.

Definitely,

I brown my meat, take it out and brown my onions, then mix everything together. As far as rice, I've forgotten to cook rice the day before a couple times. I just boil it for 15 minutes, drain it and put it on a cookie sheet in the freezer while my meat is cooking (don't let it freeze). It works pretty well that way.

Yeah, my mom calls it that sometimes. I've always called it rice dressing.

We also make it with Merlitons and call that Merliton Dressing.
