Monday dinner

Why is Monday's evening meal the hardest damn one of the week to figure out? I keep having breakfast for supper because I.just.can't.cook on Mondays. I cooked all freakin' weekend, and yet, Monday is still a struggle. All of my weekend project cooking did not result in readily reheated leftovers. (jam, bread, stuff for the freezer)

Bah. Mondays.

I meal prep on Sundays, Mondays are a breeze. It's usually about Wednesday when this happens to me.

Usually make a big pot of instant pot beans and bank it in the freezer for such days.

Oh, I always have a freezer full of cooked food: beans, meat sauce, chili, beef stew, soups. But I didn’t put anything out to ted half saved the day by coming home w pork and veggies so I made Thai ry.

I had the foresight to go to Calandro's yesterday and pick up some stuffed bell peppers. So that's' what's up tonight.

Mondays are Caesar salad in a bag with chicken. Very easy and quick. Throw the chicken in the sous vide while I unwind for an hour. 5 minutes of total work for chicken and mixing the salads.

Also a great light meal coming off a weekend of eating.
