Monday Brisket in-game thread

Wanted to start earlier, but today was a busy, shitty day. So, this will make everything better:

Bought pre-trimmed Brisket Flat. Salt and pepper rub for 24hours.

Got her on at 10:30. I don’t really do a temp/time calculation.
Internal temp of 192. Shooting for 200f then rest in insulated cooler for at least 2 hours.


This is what she looks like: threw some left over wings from last night for a quick reheat snack while finishing FBD.

@200f now 2 hour rest or until the rest of dinner is ready.

Hopefully you wrapped with a lot of moisture or it’s gonna be dry AF.

Slices came out good. A little dry for my taste. Word to the wise, when purchasing a pre trimmed brisket wrap in foil or paper mid cook to get through the stall.
