Make your own crawfish seasoning?

Anyone got a recipe for crawfish seasoning?

Crab Shrimp And Crawfish Boil

Ingredients
4 Tbs salt ((kosher salt optional)
4 Tbs yellow mustard seeds
3 Tbs coriander seeds
2 Tbs dill seeds
1 Tbs celery seed
1 Tbs crushed red pepper
8 bay leaves, crushed
Salt and cayenne pepper to taste
2 Tbs Creole seasonings

1. Mix dry ingredients together using a fork or place in a jar, cover and shake it thoroughly. Store in tightly covered container. Add Crystal or Tabasco sauce to taste when using.

Yield: about 1/2 cup

Crawfish Boil

Ingredients
2 Tbs Coriander seeds
2 Tbs Cumin seeds
2 Tbs Mustard seeds
2 Tbs Dill seeds
3 Bay leaves
6 quarts Water
1/4 cup Kosher salt
3 Tbs Freshly-ground black pepper
1/4 cup Cider vinegar
2 whole Lemons
4 Tbs Cayenne pepper
1 small Onion, spiked with
10 Whole cloves
3 Celery ribs
5 lbs Fresh live Louisiana crawfish

1. Combine the spice seeds and bay leaves in a piece of cheesecloth and tie to form sachet. In a large pot combine water, salt, pepper, vinegar, lemons, cayenne, onion, celery and spice sachet and bring to a boil. Allow mixture to boil for 20 minutes. Add crawfish and cook for 5 minutes. Remove from heat, cover and let stand for 15 minutes. Drain and serve with hot sauce. This recipe yields 6 to 8 servings.

Crab Boil Spices

Ingredients
1/4 cup pickling spices
1/4 cup sea salt
2 Tbs mustard seeds
2 Tbs whole black peppercorns
2 Tbs hot red pepper flakes
1 Tbs celery seeds
1 Tbs minced dried chives
2 tsp ground ginger
2 tsp dried oregano
5 bay leaves

1. Add all of the ingredients to the bowl of a food processor fitted with the metal blade. Pulsing, process until the mixture forms a coarse powder.

2. This recipe yields about 1 cup.

3. For cooking shrimp, add 1/4 cup of the spices, along with 2 teaspoons salt, to a large saucepan of boiling water or half water and half beer. For lobster or crab, use 1 part distilled white wine to 3 parts water. Add the seafood and cook for 2 minutes, or until just cooked through. Remove the seafood and serve or chill.

Yield: 1 cup

We do a boil a couple of times a year with no powdered seasoning. It's a recipe from the wife's side of the family and its all fresh cut veggies/lemons/etc. We do add a small bottle of liquid boil for a little heat, but it has a much better flavor than the powdered seasoning. I'll see if i can get it from her dad this weekend.
