Made this chicken curry today

From a South African named Loraine Steyn, this curry adds butternut squash and bakes after cooking all the veggies on the stove. Totally different than most curries I've had. I added just about every Indian spice I had in my spice cabinet, as well as ample cinnamon for a sweet/spicy contrast.

No pics, I apologize, but it turned out great. A bit more red than many curries I've cooked and the butternut squash and zucchini (or courgettes, as the South African calls them) added a different dimension. The cinnamon, combined with the heavy coriander garnish, complimented the squash-heavy recipe well. This is one I'll keep for the recipe book for sure. I also liked the baked approach as it seems most curries I've cooked are confined to the stovetop.
