Made a really good orange chicken yesterday, sorry, forgot pictures

I had approximately 2.5lbs of chicken thighs cut up.
3 eggs
1.5 cups of cornstarch
Approximately 3/4-1 tsp of salt and maybe 1/2 tsp of pepper
oil
For orange sauce
1-1.5 cups of orange juice
zest off 1 orange
1/4 cup, maybe a tad more of sugar
1 or so tsp of ginger, I used paste
2 Tbsp of rice vinegar
3 Tbsp of soy sauce
2 minced garlic cloves
Some red pepper flakes, I didn't put much in there.
1 Tbsp of cornstarch and 2 Tbsp of water for later
Beat eggs in one bowl, and in another bowl, put in 1-1.5 cups of starch and the salt and pepper. Dip chicken in eggs and then toss in starch I put in oil when I put some starch in oil, and it sizzles really well. Fry chicken in batches and put on paper towels or a wire rack.
For orange sauce, put juice, zest, sugar, ginger, soy, rice vinegar, and garlic in a pan and bring to a simmer for 2-3 minutes. After mixing Tbsp of starch and 2 Tbsp of water, add to the orange sauce and stir really well. You can turn off the heat. Add orange sauce to the chicken and stir really well. Can chop up green onion if you'd like and add to top, I forgot to get green onion at the store. I ate it with rice and broccoli.
I really just kinda winged the recipe but it came out really good.

I do a similar one and you add some marmalade.
