Leftover Jambalaya

I made a massive pot and will have plenty of leftovers. Is there a proper way to freeze it because I don’t want any to go to waste

I’ve vacuum packed it and put it in the freezer for several months

I’ve done that as well and it was mushy

Several time a year I will cook a 3+ gallon size batch of Jambalaya.

But..... after I cook all the meat and veggies, I freeze this "stock" in small or medium size container to have easy to fix meals later.

I do cook some of the "stock" and rice to eat and have some leftover for the next day. I don't freeze any of the jambalaya with rice in it.

When I thaw out the jambalaya "stock", I usually add some water and cook the rice in the "stock" but I sometimes just add already cooked rice.

Never liked rice that has been frozen and thawed out.
Be it jambalaya, dirty rice, boudin or even plain white rice.
