Tips on adding liquid to leftover gumbo?
We have lots of chicken and sausage left just nit enough liquid. Is it as simple as adding extra chicken broth?
Should I add some extra roux? Seasoning?

That’s never happened. Normally I might need to add more meat as there is always a ton of liquid.

simple short answer is no, you cant just add liquid, because it never tastes right again after you do. if you add more liquid it tastes like weak watered down gumbo no matter what you do.
it can be done to be sorta ok tasting if you remove all the meat from it and cook some fresh trinity and then add the liquid again and cook for a while (at least 30 minutes) so the flavors can all blend together but at the end its still not gonna have that original gumbo taste you are hoping for because its not cooking with all the meats in it so it can give it that flavor.
