Will say this: a lot of people I know working there were fired from several restaurants and bars in BR so that explains the service.
The one visit I made there (opening week), my server was a sweetie who was really trying. He had a friendly personality. I wouldn't necessarily call him an outstanding server but dude tried.
Judging by the people I know getting jobs there, they just take a look at you and if you look right, they hire you.

LL, having tried Lava Cantina during opening week would you be opposed to going back and giving it another try now that many of the problems from that time period have been worked out?
