Will Kraft paper work just as well as butcher paper? I can't find any butcher paper anywhere locally and don't have time to order any. I do, however have a bit of Kraft paper, will this work just as well?

ehhh, no. in my days at the paper company, kraft paper was sold to businesses looking to package stuff. butcher paper was sold to businesses dealing with direct food contact. I wouldn't substitute it.

You trying to wrap a brisket?

Yep, trying not use foil, I wonder if parchment paper would work?
