Keto Tex-Mex Cheesy Chicken Soup (Photos)

Here is a cheesy chicken soup with a nice Tex-Mex flavor, a slight amount of heat and a taste you will like, even if Keto is not your thing.
Not as many photos as I usually take. The wife cooked this one, and she does steps while I have my back turned, then apologizes for forgetting me.
Cheesy TexMex Chicken Soup
Ingredients:
1 large onion, diced
2 stalks Celery, diced
1/2 cup Carrot, julienned
2 cups Fresh Green Beans, cut into pieces
3 cans Rotel Tomatoes
4 cups chicken stock
2 cups rotisserie chicken (dark meat), cut into spoon sized pieces
12 – 14 ounces Pancho’s White Queso cheese
Directions:
If using rotisserie chicken, remove meat from bird and make stock from bones, with one stalk of celery, one medium onion, black pepper and salt. Remove bones and save stock for the soup.
Prep vegetables and chicken
Sauté onion, celery and, carrot in 1 Tablespoon oil or chicken fat, until tender.
Add Rotel tomatoes, Chicken stock and green beans. Cook for 20 minutes at a low boil.
The third can of Rotel is hiding behind the chicken stock.
Add chicken to soup and cook for another 20 minutes. Taste for seasoning and add salt if needed.
Add white queso cheese, bring to serving temperature and serve.

Mom says we have all this in the freezer/can except for the cheese so we've got dinner planned for tomorrow during this bitter cold snap.
Mom also chuckled when I told her my plan to find out your address and somehow convince you this 58 year old man is just one of your grandkids so I can wrap my tastebuds around some of your excellent productions.
