I've been asked by a Broil King rep. to help them with a trade show here in New Orleans in a couple of weeks. They will be coming in from Canada so they asked me to help with putting together some grilled appetizer sample stuff to be given out at the trade show. Not a problem for me but I decided to experiment with a few things to serve. Yesterday I picked up a couple of pounds of fresh 20 count shrimp, peeled them but left the end of the tail on for easier eating. These were seasoned with Oakridge BBQ's Devil Dust seasoning and set back in the fridge. I should mention that one of the items they wanted to showcase was a grilling steel so I thought this would be a good thing to cook on the steel. I used mine I got from them a while back. Close to the time to cook the shrimp I poured a lil olive oil on them. With the steel pretty hot I started the cooking of the shrimp which cook hot and fast like this. I cooked the shrimp in three batches just to see how fast they'll cook.

Here's one batch of them almost done.



Done and ready to be taste tested by the family.



Before I did the shrimp I smoked a dozen ABTs to make sure that was one of the other things I wanted to do. I made five of them with leftover crawfish from a baked potato filling I made Friday evening and added a fresh shrimp to it before wrapping with the bacon.

Those came out really good but may just be too labor intensive to be doing about 200 of.

You can the tails sticking out on those with sthe whole shrimp tail.



This is the cream cheese mixture with the crafish. that I made and used.



The top row are the shrimp ABTs. This was before they were done and glazed with jalapeno pepper jelly sauce.



The other item I'm thinking about serving is these 1.5 oz. boudin links.



So basically here's what will be served.....



The shrimp were fantastic with a nice spicy kick. The ABTs are always delicious and the boudin being perfect tasting serving size is pretty darn good after grilling to get a nice snap of the casing.
I just hope they're serving or selling beer or refreshments for those not accustomed to spicy eating.

Looks great---what about a pick/skewer of grilled cherry tomatoes to cool the burn?

The one with the shrimp has sauted crawfish tales, garlic, onion, green onion(filling for baked potatoes) then added to cream cheese, shredded cheddar cheese, and a lil Leblanc's seasoning. The ones with pulled pork is just cream cheese, cheddar cheese and Leblanc's.
