Kansas City Steak Co (Frozen)

Had a 10oz frozen filet thawed - seasoned with provided packet - baked to 95’ internal temp then pan fried in gee 3min per side - omg that was amazing. Nice crust - tasty - and super tender.

I was very skeptical but these things were amazing. Anyone else have good experiences with frozen steaks?

I rarely buy steaks locally so almost everything I cook has been frozen. Never really been disappointed when buying from reputable sources.

Yep all my steaks are frozen because we buy a whole cow once a year. No change in quality.

I was really surprised I usually buy fresh m. There was literally no difference and the quality of steaks was amazing

Nothing wrong with frozen steaks as long as you let them defrost naturally.

Yea I just let it sit on the counter for a couple hrs

Are you using a defrosting tray? Mine take all day it seems.

I actually defrost mine overnight in fridge the day before I plan to cook. Couple of hours seems a bit of a reach.

I buy steaks on sale and then freeze them. That way, I can get prime steaks for the same cost as choice.

I will take them out the day before and put it in the fridge. The next morning, if they are still usually still partially frozen, I'll put them on the counter top for an hour or two. Then I put kosher salt on them, and back into the fridge for 4 or 5 hours or until about 30 minutes before grill time.

This article may be of interest. I still tend to cook steaks thawed, but have tried this technique with great results.

Cooks Illustrated - Science of Cooking Frozen Steaks

"RESULTS

Not surprisingly, the frozen steaks took longer to finish cooking through in the oven (18 to 22 minutes versus 10 to 15 minutes for the thawed steaks). What was surprising was that the frozen steaks actually browned in the skillet just as well as, and in the same amount of time as, the thawed steaks. Furthermore, they had thinner bands of gray, overcooked meat directly under the crust than the thawed steaks had. We also found that these steaks lost on average 9 percent less moisture during cooking than the thawed steaks did. Sampling the steaks side by side, tasters unanimously preferred the cooked-from-frozen steaks to their thawed counterparts.

I mean I don’t remember the exact time but I pulled it out after lunch and was thawed by 430-5ish
