Second sidebar. I feel like calling it “Jam” or “Jambo” is borderline douchey. Something I would expect Andy Bernard to call it.

While I certainly can understand the comparison here, I don't make jambalaya as a substitute for paella, nor vice versa.

Two different dishes for two different moods.

Go fusion for the best of both worlds - cook jambalaya using cajun seasonings and ingredients but use the Spanish bomba rice and cook it using the open skillet paella method where you get firmer rice and vegetables with the caramelized crust (socarrat) on the bottom.
