Jambalaya burner

cooked my first 5 gallon jambalaya Saturday on my regular fish cooker burner and it turned out great. I was wondering if I could cook it on my banjo burner I use for crawfish? Can I regulate the heat low enough to keep from burning it? The reason I ask is because with the heavy pot it was very top heavy and my banjo has a much wider base.

Probably, but IMO it depends on the distance from the bottom of the pot and the flame.
Also, you do not want to cook over a yellow/orange flame if you have to turn the banjo that low.
It will put carbon deposits on your cast iron pot
FYI
I have a regular fish fry style burner that I use with my 5 gal Cajun Classic pot. It has a round bottom and fits perfect in that particular burner as I used a side grinder to angle the tips of the burner stand to allow the pot bottom to settle in. Works perfectly
