I’ve got a hankering for Pralines

I’ve gone through my cookbook library, and have yet to find two recipes that match. Going to make a batch tomorrow, but may end up making a couple of batches to compare/contrast.

this is from the NO school of cooking.
I used to work there and made these many dozens of time.
It’s pretty good and it’s easy
INGREDIENTS:
1 ½ C. sugar
6 Tbsp. butter (3/4 stick)
¾ C. light brown sugar, packed
1 ½ C. pecans, (roasted optional)
½ C. milk
1 Tsp. vanilla
PREPARATION:
Combine all ingredients and bring to a “softball stage”* or (238-240 degrees), stirring constantly. Remove from heat.
Stir until mixture thickens, becomes creamy and cloudy, and pecans stay suspended in mixture.
Spoon out on buttered waxed paper, aluminum foil or parchment paper. When using waxed paper, be sure to buffer with newspaper underneath, as hot wax will transfer to whatever is beneath.
NOTE: To roast pecans, bake them on a sheet pan at 275 degrees for 20 to 25 minutes, until slightly browned and fragrant.
* When you place a spoonful into a glass of water it sticks to the side

Let me add: don't be tempted to double up the recipe. Just do this same recipe over and over until you get the number you want. If you make too much at one time, as you get towards the end, the mixture is cooling and becomes thick and sugary. Nothing wrong with that. Break them up and use them to make crumbles for desserts, like on top of a cheesecake.

Marshmallow Pralines
1 stick of BUTTER
2 cups Sugar
1/2 cup of pet milk
1 1/2 cups Pecans

Get some news paper or a bathtowel and spread it out on a flat surface. Lay some way paper over that and mist it with a light coat of pam.
In a heavy saucepan melt butter and add sugar and pet milk and stir till melted, add marshmallows and continue to stir, cook to 238 degrees, take off heat add vanilla and stir till it begins to thicken, drop them 1 at a time onto wax paper. I use a Small scoop, I think it hold about 1/8th of a cup. Let cool and enjoy.
