I suggest the America's Test Kitchen Pressure Cooker cookbook. They have some excellent recipes and they describe WHY their recipes work which I find really interesting a lot of the time.
I love to do shredded chicken for tacos, chicken salad, etc.
This is super easy for chicken tacos or anything you would want mexican style shredded chicken in:
2-3 chicken breasts
1 can rotel
1/2-1 can water
salt
pepper
cumin
chili powder
garlic powder
Season to your tastes but don't go overboard, you can always add more after chicken is cooked and shredded.
Cook on high pressure for 12-15 minutes depending on size of chicken. Take out chicken, let cool enough to shred. I shred mine with a handheld mixer.
Throw chicken back into juices and put on sautee until you cook out enough of the extra liquid. Season more as needed.

I love my Instant Pot. We cook most meals in it, actually. Meat comes out INCREDIBLY tender and it's always so quick and easy.
There are recipes for basically everything you could ever want to make that have been modified for the Pot, and you can install an app on your phone that has recipes as well. The possibilities are endless, and it saves so much time. Also, no problem if you forget to thaw out your protein.
We have the Pot with the Bluetooth option, and I highly recommend it. I can go relax in the next room and my phone lets me know when the food is ready in case I can't hear it beep.
