In game thread - Short Ribs - the greatest and easiest dish you can make

I didn’t photograph the first two steps, but add olive oil, butter, garlic, and onion to pot.
Sauté the garlic and onions for 2-3 mins.
Season the ribs with salt, pepper, brown in the pot, all sides.
Remove the ribs, add red wine and bring to boil, reduce wine by 1/2
Return the ribs to the pot, add beef stock until about 1/2 inch from the top. Return to boil.
Cover, put in oven at 275 deg for three hours
(Subtle brag on my Griswold #10)
See you in three hours

Here you go…
After three hours, remove from oven and remove the ribs. Add 1/2 cup stock to pot, bring back to boil, reduce, strain, and remove fat off top
Meantime, let’s make the grits and Brussels sprouts
1 cup white grits with 1.5 cups half/half and 1.5 cups water. Plus 1 cup smoked gouda (plus garlic, salt pepper, butter, and a little parm cheese)
Bake the whole sprouts for 20 mins. Remove, cut in half, add bacon and balsamic vinegar. Bake for another 20 mins (425 deg)
Enjoy

I had to put on a bib to catch the drool from my mouth seeing the ribs.
