Yours turned out a helluva lot better than mine did a couple months ago. The pork belly I got from Costco was just too fatty. I think if I attempt it again I'm going to seriously trim down the thickness of the pork belly. The tenderloin inside was amazing though.

Well all pork belly’s are mostly fat so you can trim. I did a bit but you can also roast it a lot slower in a low oven and it will render a lot more of the fat. Then put it under the broiler to crisp the skin.
