Using a 5 qt. fry daddy here. Nice catfish fillets are too large for pot.

Does one cut in half perpendicular or parallel to fillet? Or do you go full on nuggets? Like four or six pieces.

And also, point some homemade flour-based fry mixes if you have them. I cannot find any any TD book. TIA.

I cut parallel to fillet but at a slight angle and I make little 4-6 inch long strips

I don't like my pieces too big

You can try cutting strips long ways along the filet. Then just cut the strips in half. The thinner you cut the strips the faster it will cook and they will be good and crispy.

Try louisiana fish fry chicken fry on the fish its got a nice kick and is great on catfish.

I cut using a very heavy angle. You can keep the strips from getting very thick in the middle this way, so everything cooks the same. But nuggets are safe sizes and give a better batter to fish ratio.
