How much roux for a 14 qt gumbo?
How much flour and oil? Using a new pot and I’m not sure how large the old pot I was using was.

I there's no marking on the old pot indicating how many quarts it held, simply measure quarts of water and put that in the pot to see how many it holds and go from there----assuming you still have the pot.
14 qts. is 3.5 gallons of gumbo and for that amount I usually use damn near an entire quart jar of my own pre-made roux. Just start off with about 2 1/2 cups oil and 2 1/2 cups flour and go from there.

For a 2 gallon pot, I use right around 1.5 cups flour and 1.25 cups oil. So approximately double that for your 14 quart pot - 2.5-3 cups flour, 2-2.5 cups oil.
That being said, my gumbo is not the thickest in the world and I also use a lot of meat.
