I just posted this in my Madagascar shrimp thread, but I fried some royal reds last night for the first time. Here's my method:
flour with Slap Ya Mama, garlic powder, and paprika
dunk them in a mixture of milk/mustard (no egg)
1/3 Italian bread crumbs, 2/3 Panko bread crumbs a bit more Slap Ya Mama
I used to favor just flour batter, or sometimes 2/3 flour, 1/3 fish fry - but after frying pork chops in Panko, my kid started requesting Panko batter for his shrimp. I held out for a while and still did my old way, but eventually I converted to Panko too. It's just so damn good.
