From start to end

I wash them off. Pour the sauces in the water, which consist of the blends they sell at the place I buy the crawfish. Then wait till the water is boiling throw the suckers in. Wait a few minutes taste testing in between. Then once they taste cooked and have risen towards the top I throw the corn, sausage, potatoes etc. Let them cook, then throw ice on top and try to get the sauces to saturate into the crawfish etc. After that I pull it all out and throw it on the table and eat. My boils usually turn pretty good, but I feel like I'm missing a few tips to put me over the top. Anyways see if yall got any tips to help me out, and wanted to know what others do.

Wait, you throw the crawfish in BEFORE the potatoes? That makes no sense.

Yeah, should I throw the potatoes in first, then the crawfish?

Put the potatoes in the cold pot, season, then bring to a boil, go for a few minutes, then add your crawfish and cook as usual. When the crawfish are done, the potatoes will be,too.

Thanks, what are yalls thoughts on cooling off the crawfish to allow the flavor to soak in? Should I do this? If so, how?

just cut the fire and let em soak if you want. the longer they soak the more seasoning they soak up. You can also throw a little ice in when you cut the fire.

Drop a few lbs of ice in the pot when you cut the fire or take a hose and squirt the side of the pot. Cool it enough to make them sink. I think it helps...some disagree.

The Louisiana Crawfish Promotion and Research Board begs to differ.

That means 10 minutes total from the time you drop them in the water, I'm talking actual rolling boil time. If you boil them for 10 minutes and soak for another 15 with no ice good luck peeling them.

I season the water...bring to a boil for 30 minutes before adding the crawfish. Bring pot back to a boil for 2 minutes and turn off fire and remove lid...once the crawfish sink, about 30 minutes, I start tasting until I like them.

Works every time.

Removing the lid helps them pop out of the shells
