How long does it take to ferment/age? Did you use a carboy for fermenting?

I let it sit in a 6.5 gal carboy for about a month, then into a second 6.5 for another month. I got antsy so I bottled quick. I probably could/should have left it for a little while longer. red wine is supposed to take much longer, but this riesling was simple and not a tremendous amount of complex flavors going on so it was a quick one.

The fig wine I have in a carboy at the moment, I expect to take another 4 months or so to be ready.

I've been thinking about doing wine. Seems very simple, and a good way to kill time in between brewing beer.
