I saw on FB that Karchner's in Scott is selling hog lard by the gallon for $6.99 in case any of you are looking.

For y'all with water circulators and love for carnitas, this Rick Bayless recipe has you essentially making carnitas confit in fresh rendered pork lard then browned in a frying pan. I've made this several times and they come out delicious.
That's a deal at $6.99/gal. I pay $4/qt at my local Mexican grocery.

Kirks You Need A Butcher on Surrey (LAF) also sells hog lard by the gallon when available as it goes fast. IMO, Kirks has the BEST chicken cracklins, and it's not even close.
