If anyone has a recipe already or has any suggestions for this idea please add them.
The idea is for some spicy meaty balls.
Brown 1 lb jimmy dean ground sausage with a half of onion, then add a pack of cream cheese. Maybe add some bread crumbs to give the mixture a little more stiffness.
Then wrap that mixture around a little square of jalapeno.
Then wrap some cheap thin bacon all the way around that ball, spear with a toothpick, then bake at 400 for 15-20 minutes.
Hopefully keeping all of this still small enough for a single bite. More than anything I'm just trying to avoid any pitfalls that any of you see here. Will the jalapeno cook enough in the oven, or will it still be too raw and bitter. Should I cook it down beforehand. Or should I just mince the jalapeno and cook it in with the rest of the sausage?

Half ground beef, half hot fresh sausage meat (squeeze it out of the casing)
