Chicken and sausage, let it cool, then put it in the refrigerator for the night. If you want to add anything, already have the gumbo pot simmering, then add the very light seared seafood into the pot and turn off the heat when the seafood hits the pot, plus put the lid on.

I would like to see a worksheet/tab for cheats including recs on jar/canned roux or starter.
