I make my roux in cast iron, but I don't have a cast iron pot large enough to make the entire gumbo in it. I use my 22 quart pot and usually a 16 quart pot with that to make the gumbo, itself. However, if I had a cast iron pot large enough to make large quantities, that's what I'd use. I have a small 6 quart cast iron pot, but my skillets are the deep fryers for the rouxs.

This winter I started using a large cast iron I got last fall for my bday. Made some of my best gumbos ever
