i never use stock in my gumbo, only if im making a chicken soup

i never season my chicken, i bake the chicken in oven first then de-skin and de-bone it

i add the de-boned chicken to the gumbo last when its almost done. you should only season the gumbo water not the chicken

I use stock for my gumbo and add water later in the cooking process if I need to thin it out. I do not season the liquid (I do add bay leaf), but instead season the veg/meat.

I season every ingredient throughout the process. I usually add Tonys/Slap ya mama while cooking trinity. I certainly season chicken if Im browning before adding. If I'm adding smoked chicken or sausage I don't season it any further after smoke.

I taste it towards the end and add salt or other seasoning if need be. Most times it doesn't need any additional seasoning if I've seasoned ingredients when adding.

everyone has there own way that works best for them

the reason i wait to season it at the end and just add seasonings to the water is to prevent accidental over seasoning it. plus the smoke sausage adds a lot of seasoning to the water as it cooks.

I make the roux in the oven, super dark, won't burn. Last 20 minutes of the roux baking, I cook the vegetables, by themselves. Meat on the grill. Take the roux out and add stock and vegetables. I keep everything separate and have made awesome, dark gumbos.
