grilled veal shank

can you just grill veal shank med rare like you'd do a filet; all the recipes call for braising, it really looks super tender though?

Shank from any animal is tough as shite unless you give it time to break down

Sure, you can... but you shouldn't. There is a tremendous amount of connective tissue that will make your eating experience less than desirable. Also, as mentioned, it is also a tougher cut of meat that requires long cooking time to break down the connective tissue and render the muscles tender enough to fall off the bone.
