Green vs Red Peppers

I notice most people eat their jalapeño peppers green. I don’t think I’ve ever seen someone use green cayenne peppers in anything? Just curious if there is a flavor difference between the two. Generally, I think they are hot enough where I can’t tell anyway, but wanted a second opinion. One of my cayenne plants didn’t make it and I have a bag full of green peppers frozen while the remaining plants produce red ones.
