Good meat pie recipes

Like a nachitoches meat pie but smaller. More appetizer or lunch size and baked not fried? Or empanadas?

I get empanada wrappers in the frozen section at LaTienda in Baton Rouge. They are 5 1/2 round. I make a batch of meat mixture and store it in the fridge the night before. This is a basic recipe. The part where it says to sprinkle the meat mixture with 2 Tbs flour, substitute brown gravy dry mix.

Want to do something different? Franks Red Hot chicken empanadas. I omit the blue cheese dressing.

I freeze after I make them. I thaw first before frying. If you want to bake, I put single pies in the microwave for one minute then 2-3 minutes each side in the air fryer. Great snack or a light meal.

Thanks man. Have you ever baked them after making them as opposed to frying?

I’ve baked them. They are ok. Nowhere near as good as fried, but it can get the job done. I’ve also air fried frozen meat pies and that worked like baking.

I wonder if that is because of the dough. I had some last month that were homemade using homemade dough and only cooking was in oven and they were incredible. Beef/pork mix so not sure that mattered. But really good.

The OG way is a dough made with lard. I've always heard that lard makes the best pie crusts and pies are baked. I may need to seek out a recipe.
