I make the gumbo and chill. Schlep it to work, put the crockpot to heat with a few carafes of boiling water in it from the coffee machine, wait about 1/2 hr, dump the hot water. Microwave gumbo til hot, stick in warmed crockpot to keep at a food safe temp for a couple hours.
I’ve got the pork roast in the crockpot right now. Rubbed it with a dry chorizo seasoning, added four sliced bell peppers. Did not sear. Cooking for 4 hrs at high, 2 hrs at low. Smells pretty good.

Crock pot drippings are pretty good turned into a gravy or sauce.
